I’ve since found another recipe using 1 cup juice and 2 tbsp agar powder and the entire mixture is simmered while whisking for 3 minutes. Maybe a similar step is missing in this recipe? And instead of powdered gelatin, I used agar-agar bars. Though a bit tougher and less floppy than gelatin, agar-agar which is made from seaweed is a great and healthier substitute.
